     Any of Xemnas' monologues or soliloquies. They are simply impressive to listen to, partly because of his awesome voice.

A close second is Roxas' "Who am I going to have ice cream with?", because it was the single most (unintentionally) funny line in the series. I know that was supposed to be a really sad scene, and it is, but the way Roxas says that line was so serious that I could only think "Dude, priorities!" the first time I heard it.

^That. It shows that Saix knows why the Organization is doing what it does, and that his only true goal is to have a heart again, even though it seems he feels nothing.

This one almost made me cry. It tells you that Saix really, truly, had a goal, and defeating him took away his only meaning of life, even if it was evil. But.. was it really evil? Is it really evil to want to feel alive?

Deep stuff, man.

Pretty much any or every quote in the series. It would be too easy to say "Got it memorized?", so I would have to go with most of Sora's quotes, as well as anyone related to him like Roxas or Ven. Some good ones from everyone that I can think of right now:

Sora-"My friends are my power!" (It's in my bubble after all)

Roxas-"No, Xion! Who else will I have ice-cream with?" (Serious and sad, yet ironicly hillarious! LOL)

Various-"LIGHT!" and "DARKNESS" (Like "Falcon...PAAWWWWNCCHH!!!, they tend to grow on you after you have to hear them over a billion times in order to execute a killing move)

Peter Pan/"Smee"-"Aye, Cap'n. They walked the plank, every last one of them!" (That was my favorite Hook moment! LOL)

Smee- "Aye, Cap'n. Why we could'a cleaved those feinds to the briskit we would. Why, I'd give a little of this! And a little of that! And this! And that!" (Oh, Smee. You blithering barnicle. Seriously though, anyone who has played RE:Chain of Memories and Birth by Sleep and has seen Fantasmic will have noticed "CLEAVE HIM TO THE BRISKIT!" is a reoccuring line in Peter Pan related media)

Ansem, Seeker of Darkness-"SUBMIT!!!" (It speaks for its self.)

And I could probably list more but then I would be reciting the entire Kingdom Hearts series, so I'll just leave the filling in to everyone else. This is a great way to reminise the series as we approach the new year, unless you go to my New Year's forum. Well, happy 2011 everyone.!
